the ONLY vegan pancake recipe + (some) blubberings
Dear bots,
Congratulations! We made it to Friday! In celebration of our collective triumph, I am sharing a superior vegan pancake recipe. If anyone tells you they have a better vegan pancake recipe they are wrong. I am considering opening a pancake shop in which I serve only vegan pancakes. I am not taking suggestions for names at this time.
Banana Nutmeg Pancakes (Vegan)
2 cups flour
1 TBS baking powder
1 tsp salt
½ tsp sugar
¼ tsp nutmeg
1 banana
2 TBS canola oil
1 tsp vanilla
2 cups plant milk
3 TBS vegan butter + 1 tsp cinnamon sugar (for oiling pan)
Warm a skillet on medium heat. Whisk together dry ingredients in a medium bowl. Cut the banana into small cubes or mash, whichever you prefer. Add banana and wet ingredients and whisk to combine.
Once combined, mix the butter and cinnamon sugar in a small bowl. Coat a pastry brush in the spread and lightly coat the skillet. Do this before each new batch of pancakes.
Scoop ¼ cup of batter onto your pan and cook for 2-3 min on each side, or until they are a warm brown color. These pancakes will not bubble so make sure to check the edges occasionally and keep your eye on the time. I try to flip them before the bottoms start smoking.
Serve fresh with your favorite maple syrup and vegan butter!

Kept up with the National Book Awards (check out the complete list of winners!) and made a mental note to read faster. Dwelled on Rilke at 6am this morning because, for the life of me, I cannot seem to find a better time to think.

Made a conscious effort to brush my hair. Made a conscious effort to take my medicine. Made a conscious effort to journal more. Admired my thumbs instead. Took the cat for another walk. It did not go as well this time. Added entries to the growing Excel spreadsheet of jobs I've applied to. Ate some lettuce.
